Yields: 4 Servings
2 lbs Ground Alaskan Reindeer
1/4 cup grated Romano Cheese
1/4 cup grated Parmesan Cheese
1 1/2 cup Bread Crumbs
1 1/2 tbsp Parsley
3 cloves Garlic, minced
Salt and Pepper, to taste
1/2 medium Yellow Onion, chopped
1/2 Green Bell Pepper, chopped, add to taste
1/4 cup Tomato Sauce
3 to 4 fresh Mint Leaves, minced
1/4 cup Virgin Olive Oil
In a large bowl mix all ingredients except the olive oil by hand. Form Alaskan Reindeer in to balls of desired size.
In a pan over medium heat add oil and brown meatballs on all sides. Preheat oven to 375F. When meatballs are browned carefully place pan in the oven and cook for 20 minutes.
Carefully, with hot pads, remove meatballs from oven and plate with additional tomato sauce and cheese or serve over pasta.
