Preparation Time: 50 minutes
6 Hot Dogs
1/2 cup All-Purpose Flour
1/2 cup Cornstarch
1 tsp Salt
pinch of White Pepper
1 1/2 tsp Oil
1/2 to 2/3 cup beer, at room temp
1 cup Coconut, slightly chopped
3 Tbsp Flour
Oil or Fat for frying
In deep fryer, heat oil or fat to 350F. Preheat your oven to to 275F.
Combine flour, cornstarch, salt and pepper. Stir in 1 1/2 teaspoons oil and gradually add beer to a point where batter is not too thin. Coat hot dog with batter, lifting out of batter with a fork. Sprinkle with coconut. Roll lightly in flour. Fry hot dog in oil until golden brown.
Heat in oven for 8 to 10 minutes, until hot dog is heated throughout.
