Roast Caribou Recipe

Preparation Time: 90 minutes
Marinade Time: Overnight
2 Servings

Ingredients:

4 lb Caribou Roast

Marinade:

1/2 cup Vinegar
2 clove Garlic, minced
2 Tbsp Salt
2 Tbsp Flour
2 Tbsp Oil

Paste:

2 clove Garlic, minced
1 Tbsp Brown Sugar
1 tsp Mustard
1 Tbsp Worcestershire Sauce
1 Tbsp Vinegar or Lemon Juice
1 can Tomatoes (14 oz)

Directions:

In a large zip-lock bag, combine the caribou roast with the vinegar, garlic and salt. Marinate overnight in the refrigerator turning occasionally.

Preheat oven to 450F. Remove roast from the marinade and discard marinade. Pat roast dry, roll in flour and brown in a little oil in a hot skillet. Make a paste of the remaining ingredients and smear over the roast. Place in oven, reduce heat to 300F and roast 60 to 80 minutes until finished to desired doneness.

Deglaze the pan and make gravy.
