Orange Glazed Caribou Roast Recipe

4 lbs Caribou Roast
1 Tbsp Oil
Salt & Pepper, to taste

Basting Sauce:
1 cup Orange Juice
1 Tbsp Lemon juice
1/2 tsp Allspice
1/2 tsp Crushed Juniper Berries

2 Tbsp Butter
2 Tbsp Orange Juice
1 Tbsp Brown sugar
1/2 cup Wild Currant Jelly
1 dash Angostura Bitters


Preheat oven to 450F degrees. Smear roast with oil and season with salt and pepper. Sear in the oven 15 minutes. Reduce to 325F and cook covered for 60 minutes.

In a medium bowl, mix the orange juice, lemon juice, and allspice and baste every 15 minutes.

In a bowl, mix the butter, sugar, orange juice, jelly, and bitters. Brush the glaze on the caribou roast and cook uncovered another 15-20 minutes. Serve on large platter surrounded with steamed vegetables.
