Caribou Chili

Caribou Chili Recipe

Serves 8


4 lbs ground Caribou
1 large Onion, chopped
2 Garlic cloves, minced
1 tsp Oregano
2 tsp Cumin
1 cup Beef Broth
6 tsp Chili Powder
1 1/2 cups canned Tomatoes
1/2 tsp Cayenne Pepper
2 Tbsp Cilantro, fresh chopped
Salt, to taste


Cook caribou, onion and garlic in a large heavy skillet until slightly colored. Add oregano, cumin, water, chili powder, tomatoes, cayenne pepper, cilantro, and salt. Bring to a boil, lowering heat, and simmer for one hour. The sauce may be thickened with 1-2 tablespoons of corn meal.

If possible, allow chili to cool and sit for at least 6 hours before re-heating and serving. Serve with home-made fresh bread and a big glass of milk!
