Red and Black Bean Buffalo Chili Recipe

Preparation Time: 60 minutes
Serves 8


2 lbs Ground Buffalo Meat
3 cups cooked Red Beans
3 cups cooked Black Beans
1 large Red Onion, diced
3 cloves Garlic, minced
3 Tbsp Chili Powder
1 Red Bell Pepper, diced
1 Green Bell Pepper, diced
2 Tbsp Tamari Sauce
Salt, to taste
1 Tbsp ground Cumin
1 Yellow bell pepper, diced
1 Tbsp Honey
1/2 tsp crushed Red Pepper Flakes
2 large Tomatoes, diced
2 ears Sweet Corn, shucked & kernels cut from cobs
fresh Cilantro, chopped


Cook buffalo meat in large ceramic Dutch oven until no longer pink. Stir in remaining ingredients except cilantro. Simmer gently, partially covered and stirring frequently, about 40 to 45 minutes. Taste and adjust seasonings. Top buffalo chili with fresh cilantro at serving time and serve with warmed tortillas. Note that canned beans can be used as an alternative.
