Preparation Time: 30 minutes
Hot Chile Sauce
1 1/2 lb Ground Buffalo Meat
1/2 cup Onion, finely chopped
2 to 3 Jalapeno Chiles, seeded & finely chopped
1 clove Garlic, finely chopped
12 slices of assorted cheeses
Prepare Hot Chile Sauce and set aside. Heat up your grill.
In a medium bowl, mix remaining ingredients and shape into 6 patties, each about 1/2 inch thick.
Brush grill with vegetable oil. Grill buffalo patties about 4 inches from the coals/fire, turning once, until they are done to your taste, about 4 to 6 minutes on each side for medium doneness. Just before done, criss-cross 2 cheese slices atop each burger and melt.
Serve grilled burgers on toasted buns with a generous spread of the hot chile sauce atop. Add any of your other favorite condiments and take a big bite. Be sure your favorite cold beverage is nearby.
Broiled: Set oven control to broil. Place patties on rack in the broiler pan. Broil with the tops about 3 inches from the heat, turning once, until done, about 4 to 6 minutes for medium done.
