Preparation Time: 30 minutes
2 Buffalo Flank Steaks, well trimmed
2 Tbsp Butter
1 Tbsp Flour
Salt & pepper, to taste
2 tsp fresh Parsley, chopped
Melt the butter in a heavy frying pan. Dust the steak with flour and brown well. Add enough boiling water to just cover the meat. Cover and cook very slowly, until the meat is fork tender. Remove to a warm platter, and cut into thin slanted slices against the grain of the meat. Season with salt & pepper. Sprinkle with parsley. Serve with your favorite meat sauce.
Note that Buffalo is a lean red meat and is some what dry so you have to cook it slowly to keep the juices in.
